I learned this dish in a cooking class and loved it! It can be used as an appetizer or a main course. The original recipe calls for spinach, but I used green beans instead, and it was delicious anyway.

Cooking Instructions

For the pastry:

Cut the butter into pieces and mix it with the flour. Add salt and form a well in the center.

Place the egg yolk and enough water in the center.

Knead quickly to prevent the butter from melting, as the unmelted butter will create layers in the pastry once baked.

The dough should not be smooth or uniform. Fold it into thirds, cover with plastic wrap, and let it rest in the fridge for at least 30 minutes.

Meanwhile, boil the green beans.

Roll out the dough to a thickness of 3/4 inch and cut out 3-inch diameter circles.

Bake in the oven at 350°F until golden brown.

For the egg:

Boil water with 10% white vinegar in a deep pan.

Create a whirlpool with a spoon and gently drop the egg in one go without breaking it.

Cook for a few minutes and carefully remove with a slotted spoon. Place it on a plate.

Arrange the green beans, pastry circles, and egg on a plate.

Sprinkle with Parmesan cheese shavings and a bit of nutmeg.
