  1. For the pastry:
  2. 3 1/2 tablespoonsbutter (about 50 grams)
  3. 3/4 cupflour (about 100 grams)
  4. 1egg yolk
  5. Salt

  9. Water and white vinegar
  10. 7 ouncesspinach or green beans (about 200 grams)
  11. Salt, pepper, nutmeg, Parmesan cheese shavings

    Cut the butter into pieces and mix it with the flour. Add salt and form a well in the center.

    Place the egg yolk and enough water in the center.

    Knead quickly to prevent the butter from melting, as the unmelted butter will create layers in the pastry once baked.

    The dough should not be smooth or uniform. Fold it into thirds, cover with plastic wrap, and let it rest in the fridge for at least 30 minutes.
