Ingredients

10 servings
  1. 2 cupsblack eyed beans(washed and soaked)
  2. 5shambo
  3. 10scotch bonnet
  4. 1onion bulb
  5. 1tspn thyme
  6. 1tspn curry
  7. 1 tbspncrayfish powder
  8. 1tspn salt
  9. 1ajino moto
  10. 4seasoning cubes
  11. 1/2 cupoil
  12. 2boiled and sliced eggs
  13. Cupcake papers and silicon mould
  14. Sliced green bell and red peppers
  15. For the sauce
  16. 2onion bulbs sliced
  17. Blended Scotch bonnet (as much as u like)
  18. Some palm oil
  19. Seasonings and spice of choice
  20. soy sauce

Cooking Instructions

    Step one you blend your soaked beans with shambo and scotch bonnet till very soft puree., to the batter add your seasonings and spice,pour in your oil and mix very well.

    Step 2: After mixing it you line your cupcake tray with liners,and spread oil into the paper as shown,or if you have cooking spray u can spray it.

    Step 3:fill each cup with the batter

    Step 4:garnish with egg and bell peppers and bake for 20-25min at 250F.by frequent checking.

    You can use silicon moulds like this and repeat same proceedure and bake

    And tana done.

    For the suace,saute the onion till soft add in your pepper and carrot and spice stir fry till soft add a drop of soy suace stir for 10 sec and turn off heat. Serve.
