I #ChooseToCook this recipe because it's one of my dad's favorites.He doesn't agree to eat it anywhere but home.He's been away from home for a while now and I miss him so I decided to cook this to make it feel just like he was here.

Ingredients

1 hour
2 people
  1. 1 cupmelon(blended)
  2. 2large bell peppers
  3. 1large onion(chopped)
  4. 2 cupswater
  5. 1/4 cuppalm oil
  6. 1 cupstock fish
  7. Seasoning cubes and salt (to taste)
  8. 1/2 cupscotch bonnet peppers
  9. 1 cupchopped cow skin(kpomo/ganda)
  10. 1/4 cupblended crayfish
  11. Dry fish as desired
  12. Fish or meat as desired
  13. 1 cupsliced spinach
  14. Curry leaves to taste
  15. Locust beans to taste

Cooking Instructions

    In a pot add a little water and boil the fish or meat, stock fish and cow skin till soft.Set aside

    In another pot,add the oil and add a little onions.Let to fry till golden brown.

    Blend the peppers and add.Let to sauté.

    In a bowl add the melon seeds and onions and a little water then mix till it forms a dough.Set aside

    In the pot with the veggies,add the stock water, remaining water, seasoning and salt,locust beans, crayfish,dry fish, stock fish,meat or fish,cow skin and let to boil properly.

    Add the melon dough bit by bit and let to cook

    Add the curry leaves and spinach.

    Let to cook for like five minutes.

    Serve with any swallow of your choice.
