Mix water into sugar in a heavy saucepan over medium heat until sugar is completely moistened. Bring to a boil, reduce heat to medium-low, and cook until the sugar and water form a golden brown syrup,(your caramel is done)and transfer to a bowl greased with butter

In a large bowl, beat the eggs, milk, corn flour, vanilla and sugar until combined, boil the mixture until bubbles on low heat and sieve with strainer to avoid lumps. Pour over caramelized sugar and cover the bowl.

Steam it in a half water-filled pot on a medium flame, when done take it out and allow it to cool, then refrigerate for some mins, bring it out and flip it over on a plate, your pudding caramel is ready.

I always peel the kabocha squash and do step 4 in the directions in several batches, then blitz it in the blender! You need some moisture when blending kabocha squash, so I put in milk.
