    Chop the vegetable, pepper, onion separately....set aside

    Heat the vegetable oil till it's hot. Add your chopped onions and pepper, stir-fry for 1 minute. Add salt to taste, crushed the seasoning, curry powder,. Leave to fry for 3minutes while stirring occasionally.

    Break the eggs to the pot and stir for 2mins.

  4. 4

    Add the chopped vegetable and stir. Leave to simmer for 3mins. Then turn off the heat and serve with either Rice, Yam, plantain, Irish or sweet potatoes.
