Salted Brown Butter Butterscotch Bars

Adapted from Sally's Baking Addiction to use less sugar.
I made the batter the day before and baked it the next day. Can't compare with the original recipe but this was delicious but greasy. Maybe less butter? A bit crumbly, not sure if due to reduced sugar, but still plenty sweet.
Salted Brown Butter Butterscotch Bars
Adapted from Sally's Baking Addiction to use less sugar.

Cooking Instructions

Mix wet and dry ingredients separately, thrn combine.

Fold in butterscotch chips and walnuts if using.

Evenly spread in prepared 8x8 inch pan. Sprinkle salt.

Bake in preheated 170 degree Celsius oven for 35 minutes, or until a toothpick comes out mostly clean.

Let cool around 10 minutes before cutting. It tastes super delicious but a bit too buttery when still warm.

This caramel shortbread bar has been around a long time. In trying to find its origin it seems most likely to have started in Scotland when milk, eggs and sugar were in short supply. So the caramel was made with a sweetend condensed milk. There are a few variations on the recipe but all have a shortbread crust, then a soft caramel layer topped with melted chocolate. My version adds toffee bits and a blend of chocolate topping. The darker you cook the caramel the firmer it will become. My bars have a soft consistancy. We are all always hunting for that elusive beast, "the perfect chocolate chip cookie". I'm not going to tell you this recipe is perfect by any means, and as it's written it's "cookie bars", not straight up cookies - although I do have a note at the end for the option of making cookies. I make bars because as a busy mom spreading my dough out in a cake pan and throwing it into the oven is faster than making batch after batch of individual cookies, waiting for my cookie sheets to cool between each batch, and lugging the dough in and out of the fridge to ensure the cookies don't spread ridiculously.What I WILL tell you is that this recipe is my own compilation of my favorite aspects of a variety of cookie recipes I've tried over the years, and we think it's delicious.
