The unexplainable natural beauty of Kashmir gifted the land with the beautiful title, “Paradise on Earth”. Kashmir is not only famous for its beauty, but for its food too. This is a traditional Kashmiri Pulao which is Saffron flavoured with lots of dry fruits, whole spices, vegetables and fruits like apple, pomegranate and pineapple!! Yes!! It makes a great combo with a spicy gravy/ curry 🍛 dish as it has a mild sweet taste.
I personally like to make them with butter chicken when I want to treat myself!!

Ingredients

Cook time:20-25 mins
2 person
  1. 1 1/4 cuprice
  2. 1 1/4 cupwater
  3. 1/2cup+ 2 tbsp milk
  4. 1 pinchSaffron
  5. 1onion (sliced)
  6. 2 tbspghee / butter
  7. 1 tbspoil
  8. To tasteSalt
  9. Whole spices:
  10. 1-2 inchcinnamon stick
  11. 1star anise
  12. 4-5pepper corns
  13. 1/2 tspcumin
  14. 2-3cloves
  15. For garnish:
  16. 6-8cashews
  17. 4-6almonds
  18. 8-10pistachio
  19. 8-10raisins
  20. 1/3 cuppomegranate seeds
  21. 1/2 cuppineapple/ apple chopped

Cooking Instructions

Cook time:20-25 mins

    Wash and soak the rice for at least 30 mins.

    Soak the saffron in 2 tbsp warm milk and keep aside.

    In a pot/ pan, add ghee and when it turns warm, add the dry fruits and raisins and sauté till nice golden. Remove aside.

    In the same pot/ pan, add 1 tbsp oil and fry the onion till brown. Remove aside.

    Now in a pot add the remaining oil and 1 tbsp ghee/ butter, add the whole spices and sauté for a minute.

    Now add salt, soaked saffron with milk, water and milk and bring to a boil. Add the drained rice and cook till water evaporates and bubbles appear.

    Cover with lid and cook on lowest flame for 7-8 mins.

    Remove in a serving dish, garnish with fried onion, dry fruits, fresh chopped fruits, whatever you like.

    Enjoy with any gravy/ curry dish.
