Found this on Pinterest and did my own thing to the recipe. These act like there’s no way they’re going to turn out and then they’re beautiful and cakey!! I agree with the recipe that you must use oil instead of butter or margarine. It keeps it a brownie consistency.

Ingredients

10 minutes
Makes 40 servings
  1. 1 1/2 cupsall-purpose flour
  2. 1 cupcocoa powder unsweetened
  3. 1 tspsalt
  4. 2 tspbaking powder
  5. 1 cuppacked brown sugar
  6. 3eggs
  7. 1/2 cupoil
  8. Powdered sugar for rolling

Cooking Instructions

10 minutes
  1. 1

    Mix first 4 ingredients in a bowl and whisk together. Set aside.

    In another bowl mix the next 3 ingredients and beat with a hand mixer. Add dry ingredients in 3 additions.

    You MUST chill this mixture for no less than 30 minutes. It’s more of a batter but super thick and sticky.

    Preheat oven to 350 and line a baking sheet with parchment. I used my cookie scoop, sprayed with non-stick spray, and dropped a scoop in a bowl of powdered sugar until completely covered. They don’t spread too much, but some. Return batter to fridge until the next batch. Bake for 10 minutes and let set for a minute and remove to a wire rack.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
