Ingredients

15 minutes prep. 30 minutes for pasta and scallops
2 servings
  1. 1/2Red Bell Pepper, julienned
  2. About 1/4+ large onion, chopped
  3. 1garlic clove, minced
  4. 2 tablespoonsolive oil
  5. 8 ozsea scallops, quartered, bite-size
  6. 1/8 tspred pepper flakes or to taste
  7. 2 tablespoonslime juice
  8. 1/4+ teaspoon grated lime zest
  9. 1 (10 oz)can Maderian Orange segments in juice, drained
  10. Salt to taste
  11. 4 ozlinguine

Cooking Instructions

15 minutes prep. 30 minutes for pasta and scallops

    Prepare and assemble all ingredients

    Place a pot with water for the pasta and heat to boiling. Add pasta and cook to your liking, keep warm.

    In a large skillet, saute the, onions, pepper flakes, and garlic in oil until onions are translucent.

  4. 4

    Add scallops, salt, lime juice, and zest and cook for about 2-3 minutes.

  5. 5

    Reduce heat, stir in the orange sections to heat thoroughly.

  6. 6

    Serve over Pasta. Good with a glass of Chadonnay.

Retired at age 55 and enjoying the mountains. I'm now 72, married for 50 years. :) I love to cook but I don't care if ingredients are Organic nor GMO, Gluten-free, low calorie, or low Cholesterol! And Never use low/no-Fat as I enjoy good food. I never take procedural pictures as most cooks know how to boil water and stir sauces.
