My late father loved to eat soba noodles prepared this way for breakfast.

Use storebought hot spring eggs (onsen eggs), or make them using other COOKPAD recipes. It's quick and convenient to make soft set poached eggs in the microwave. Heat up some mentsuyu (noodle dipping sauce) seasoned as you like. If you're using dried noodles, boil them first (don't over-boil.)

Put the cooked soba noodles into a noodle bowl with hot Japanese noodle dipping sauce. Place the hot spring egg on top, add finely chopped leek and it's done! Season with shichimi spice to taste.

I won a contest to become a tester for a brand of mentsuyu, so I tried making this. There's soy milk miso soup, so I thought that soy milk soba dipping sauce should work too - and it was delicious! I thought I'd try milk first, but that has a character that doesn't really go well with this. I think that soy milk just goes better with Japanese ingredients. I don't have special bamboo plates for cold soba, so I just used a sushi rolling mat under the soba noodles and used tea cups as dipping cups...
