I like my mashed potatoes plain (see my Mashed Potatoes recipe) but once in a while I am up for a change and I make these mashed potatoes with Vermont white cheddar cheese. The recipe was published in the NYTimes by food writer David Tanis.

My sister and I are always cooking and coming up with new ideas for dinner. One day we went grocery shopping with the intention of making fajitas that night we got everything but forgot to buy rice and beans and since we didn't have a side for the fajitas we ended up substituting the rice for mashed potatoes and it turn out way more tastier than we thought!!!

In Alabama, they call these dressed eggs. Most know them as deviled eggs. Sometimes, I put some bacon bits on the top. What makes these a bit different is the use of Albama BBQ sauce. Some people like these with relish as well, but I didn't have any on hand.
