I made this for my mom as breakfast in bed 😊 wanted to share the recipe.
Cooking Instructions

Cut your tomato and onions into smaller bits.

Break your eggs in a plate and add half piece of the maggi (mine was known chicken). Add your grounded pepper (optional). Add crayfish. (

Stir with a fork
- 5
Heat your pan.

Add a small portion of groundnut oil
- 7
Add your cut onions and tomato into the pan
- 8
Wait a minute before adding your stirred eggs.

Use a spatula to turn the eggs then scatter gently. Wait for both side to dry.

Serve. You can use both yam and bread to eat it. Your choice.

Growing up, my mom made this, just using calf brains. Thanks to mad cow disease, beef products such as this, are no longer available in the USA. But pork brains are. So I made this using pork brains. They have a slightly stronger flavor, but not too bad. You can scale this up by doubling or whatever for the amount of servings you require.
