Ingredients

1 serving
  1. 1 bunchSpinach
  2. 3Eggs
  3. Your choice of mushrooms
  4. 1/2packet Shimeji mushrooms
  5. 1/2packet Enoki mushrooms
  6. 3to 4 Shiitake mushrooms
  7. For the seasoning:
  8. 1/2 tbsp■ Chicken stock granules
  9. 1■ Salt and pepper
  10. 1/2 tbspSoy sauce

Cooking Instructions

    Rinse spinach and heat in microwave in heat-resistant dish for 3 minutes.

    While the spinach is cooking, shred the mushrooms. Crack the eggs into a bowl, add the chicken soup stock, and mix.

  3. 3

    Heat oil in the frying pan, and stir fry mushrooms with salt and pepper. When the mushrooms are tender, add the cooked spinach and fry together, then season with soy sauce.

    Evenly pour the whisked egg into the frying pan in a circular motion, and slowly blend. As soon as all ingredients are combined, remove from the heat and serve.
