Simple Roasted Salmon

P|A|S|in|A|T|X @cook_28215654
This recipe is inspired by a recipe in the NYTimes by Sam Sifton. The amount of mustard and brown sugar can vary depending on your taste.
Cooking Instructions
- 1
Heat the oven to 400 degrees.
- 2
Mix the brown sugar and dijon. You just need enough to brush on the fillets, so measure depending on how many fillets you are cooking and the amount of sweetness you want.
- 3
Rinse and pat dry the fillets and place them skin side down on a parchment paper lined oven safe cookie sheet or skillet. Salt-N-Pepa® and brush on brown sugar/Dijon mixture.
- 4
Roast in the top half of the oven for 12 minutes until salmon is flaky or until the thickest part of the fillet reaches 120 degrees.
- 5
Serve with steamed or roasted green vegetables.

Wild salmon is a great source of omega 3 (I try to avoid farmed salmon for both environmental and nutritional reasons) and it is also so versatile - delicious grilled, roasted, fried, hot, cold ... even raw!! This is a super-easy way of cooking a delicious and healthy meal. Serve with a green salad or green beans. Becky -
