Dense Caramel Banana Bread

I made this while testing caramel recipe.

If you mix in some apples or raisins and then top with rum after it's done baking, you can turn banana cake into the perfect tea time snack. This time, I added some dried fig to the batter. Recipe by Pekopuku

Ingredients

6 servings
  1. 100 gramsBread (strong) flour
  2. 4 gramsBaking powder
  3. 10 gramsSugar (light brown sugar)
  4. 30 gramsCaramel syrup
  5. 1Egg
  6. 20 gramsYogurt
  7. 2Banana
  8. 2 gramsCinnamon

Cooking Instructions

    Preparation: Peel the banana and chop it up. If it's not ripe, microwave until softened.

    Mix together the egg and sugar in a bowl. If you use a hand mixer, it mixes up nicely.

    Add the caramel syrup, yogurt, and cinnamon and mix together. Add 2/3 of the banana and mix.

    Sift the dry ingredients and fold into the dough (don't knead). Fold in the remaining banana.

    Pour the batter into the cake pan and bake at 180℃ for 25-30 minutes. When a toothpick or skewer inserted in the center comes out clean, it is done.

    Let the cake cool in the pan. Once cooled, remove from the pan and wrap with plastic. It's even more moist and flavorful the next day.
