Cooking Instructions

In a clean bowl, add all your dry ingredients

Add in oil in the center of the dry ingredients and your flavor
- 4
Mix all together until you have a crumbly texture and when pressed with your palms, retains a shape
- 5
Use a round cutter to scoop the mixture press down to hold a shape. I used a hollow spoon to make mine. Place on parchment paper/foil and bake till set.

Enjoy with tea/coffee or with your favorite drink🍸😋

So, this was actually a Pinterest fail made into a recipe. The first batch of banana pancakes wouldn't flip without making a mess(I have a really good Calphalon pan). The second batched flipped and retained its shape but was burnt on the outside and had a "raw" egg taste. Not to give up on the idea, I created a "scramble". I think its a success! Not as pretty as the Pinterest pic BUT tastier! I mixed in a dallop of yogurt and some SF maple syrup.....it reminded me of crumbled up banana bread.Hope you enjoy as I did!! Bridget -
