Uttrakhand urad dal vadas

Black gram or urad dal vadas... a special snack from the state of Uttarakhand. These vadas/pakoras/fritters are made on almost all the auspicious occasions, be it s wedding or any other celebration. Being from Uttarakhand I have enjoyed it since childhood. These vadas are a bit different from South Indian vadas which are generally made with skinned urad dal whereas these vadas are made with whole black gram (with skin or husk).
To make these vadas whole urad dal is soaked in water overnight and ground in a mortar and pestle to achieve that slightly coarse texture(But you can always use a grinder). Then it's seasoned with spices and fried to perfection. It is usually served with green(Mint-coriander) chutney and makes a great tea time snack as well.

Ingredients

30 min+soaking
4-5 servings
  1. 1+1/2 cup urad dal(with skin)
  2. 1/4 cuponions finely chopped
  3. 1green chilli
  4. 1 inchbulb of ginger, roughly chopped
  5. as requiredFresh coriander (a handful)
  6. as requriedSesame seeds(as required)
  7. as per tasteSalt to taste
  8. 1 tspbhuna jeera powder
  9. 1/2 tspgaram masala powder
  10. 1/4 TSPred chilli powder
  11. as requriedWhole coriander seeds(crushed a little)
  12. as requriedOil to fry
  13. as requriedWater to soak the dal

Cooking Instructions

    Soak the urad dal overnight. Then drain the water & rinse well.

    Now add ginger & green chilli & grind it coarsely in a mixer grinder (you can use mortar and pestle as well). Use a little water at a time if you are unable to get the correct texture.

    Leave the mixture to sit for atleast 2 hours on the kitchen counter or in the refrigerator.

    Now add chopped onions, fresh coriander, salt & all the spices(except sesame seeds), mix well.

    Heat oil in a kadhai. Then wet your hands and take a small portion of the mixture and flatten it on your palm. Make a small hole in the middle with your finger.

    Coat with sesame seeds & fry the vadas on a medium flame until crisp. Serve hot with mint coriander chutney & tea.
