This is potato casserole...quite easy to make. I loved it while growing up so I decided to try my hands at it. I'll keep working on the recipe till it's perfect! But this turned out great.

This is potato casserole...quite easy to make. I loved it while growing up so I decided to try my hands at it. I'll keep working on the recipe till it's perfect! But this turned out great.

Cooking Instructions

Dice potatoes and bring to boil for 10mins. Set aside to cool

Wash and chop the vegetables

Dice the beef and shred the fish.
(You can add hotdogs, chicken or any protein of your choice) - 4
Break eggs into a bowl and whisk till it foams

Add milk and sugar to the egg and whisk thoroughly.
(Make sure to watch the quantity of sugar)

Add flour in bits till the batter becomes creamy but NOT thick. This means you might not use up all the flour.
Whisk thoroughly so that everything can be properly mixed. - 7
Pour in the vegetables, meat and fish. Add a pinch of salt and a little seasoning. Mix thoroughly.

Grease your baking pan. Pour in the fiesta mix and bake for 30-45mins.
To check if it's ready, check with a toothpick and if it comes out clean, then voila!

Serve with tea or any drink of your choice.
