Ingredients: 1 lb. ground beef; 1 cup dry green lentils, sorted and rinsed; 1 small onion diced; 4 garlic cloves minced; 2 medium red potatoes diced; 2 carrots peeled and diced; 1 celery stalk diced; 1 can petite diced tomatoes; 2 8 oz. cans tomato sauce; 1 beef boulion cube; 1 tomato boulion cube; 1 dash of worchesire sauce; 1 dried oregano to taste; 1 season salt to taste; 1 ground black pepper to taste; 6 cup water; 2 dash sugar; 1 olive oil

We all love veggie soup around here which is crazy since my hubby and kids are so picky! I love lentils and decided to throw in whatever veggies I had laying around. Turned out great:)

Ingredients

1lb. ground beef
1 cupdry green lentils, sorted and rinsed
1 smallonion diced
4garlic cloves minced
2 mediumred potatoes diced
2carrots peeled and diced
1celery stalk diced
1 canpetite diced tomatoes
28 oz. cans tomato sauce
1beef boulion cube
1tomato boulion cube
1 dashof worchesire sauce
1dried oregano to taste
1season salt to taste
1ground black pepper to taste
6 cupwater
2 dashsugar
1olive oil

Steps

Saute onion and garlic in a little olive oil just until onions are translucent. Add meat, worchesire, season salt, and pepper. Cook until meat is done then drain. Wipe excess oil from pot then put meat.mixture back in.

Add lentils, potatoes, carrots, celery, tomatoes, tomato sauce, bullion cubes oregano, sugar, and water.

Stir everything until mixed well and bring to a boil. Cut heat down, cover and simmer until all veggies are tender. Serve and enjoy!!
