Egg-free Soft and Springy Bread

I wanted to make a fluffy bread without using eggs. I refrained from using eggs for my daughter's sake, and we can also eat it without worry since it is made at home. It turned into a nice and fluffy bread without using eggs. You don't need milk either! Make 8-10, wrap up the rest, and store it in the freezer. Tips: When you want to eat the frozen bread, first microwave and then toast it to enjoy the pure fluffiness.

Make sure to wrap the dough to keep it from drying out. Wait until the dough has properly risen. It will be sticky and hard to knead when you add in the margarine, but it will soon come together. Ingredients

8 servings
  1. 320 gramsBread (strong) flour
  2. 80 gramsCake flour
  3. 180 mlWater
  4. 100 mlMilk (add 100ml water if you don't have milk)
  5. 40 gramsSugar
  6. 6 gramsSalt
  7. 20 gramsButter or margarine
  8. 6 gramsDry yeast

Cooking Instructions

    Add all of the ingredients aside from the margarine, milk, and lukewarm water into a microwave safe bowl.

    Add in the milk and lukewarm water, and mix with a pair of cooking chopsticks until the dough clumps up. Next, knead by hand until it comes together (about 5-10 minutes).

    After it comes together, add in the room temperature margarine, and knead for an additional 5 minutes.

    Make it into a ball, cover in plastic wrap, and microwave for about 30-40 seconds!

    ★ First rise ★ Make it into a ball once more, cover in plastic wrap, and let sit until it rises to 1.5-2 times its original size (for about 15-20 minutes).

    Gently punch the dough to deflate it, and place onto a surface sprinkled with flour. Cut into 8 equal portions.

    Roll each up individually. Close the seam tightly. Place the seam facing downwards, and place on top of an oven plate covered with parchment paper. Cover it with plastic wrap to prevent it from drying out.

    ★ Second Rise ★ Microwave still covered in the plastic wrap for 30-40 seconds! Take it out, and let sit until it rises to about 1.5 times its original size (about 10-20 minutes).

    Bake in the oven at 190-200℃ for 10-15 minutes! They're done once when they're golden brown. If it looks like just the top is going to burn, please cover with aluminum foil.
