Ingredients

  1. 1 qtchicken stock(used Costcos)
  2. 3/8 lbpork shoulder julienned
  3. 3shitake mushrooms sliced
  4. 5 pcblack fungus chopped
  5. 1/8 inchslice ginger minced
  6. 5 ounceextra firm tofu 1×1/2×1/4"
  7. Handful julienned carrots
  8. 1/3 cupbamboo shoots julienned
  9. 1&1/2 tsp chili paste (Sambal)
  10. 3/8 tspwhite pepper
  11. 3/16 Csoy sauce
  12. 3/16 Caged vinegar
  13. 1/2-1 tspdark soy sauce
  14. 1egg beaten
  15. 2scallions chopped
  16. 1/2 tspsesame oil
  17. 2 Tbscorn starch plus water to make slurry

Cooking Instructions

    Heat stock to boiling in wok

  2. 2

    Add mushrooms, carrots, bamboo shoots, ginger, Sambal to pot. Reduce to low and cook 6 to 8 minutes

    Add pork that an hour prior was marinated in 1 Tbs soy, 1 Tbs water, tsp corn starch, 2 Tbs cooking oil, 1/8 tsp white pepper and sprinkle of salt. Stir soup to separate pork. Cook 2 minutes

    Add all soy sauce, vinegar, 3/8 tsp white pepper and cook 4 to 6 minutes

    Slowly add slurry and return to low boil to thicken

  6. 6

    When thickened, add beaten egg in spiral pattern. Wait 5-10 seconds, slowly stir to form egg ribbons

  7. 7

    Add tofu and sesame oil and cook 2 minutes

  8. 8

    Serve with chopped scallions and fried wontons if you like
