Soak the dried shiitake mushrooms in a small bowl of water until soft, then slice them into thin strips. Reserve the soaking water. Cut the pork belly, carrot, and tofu into thin strips and set aside.

Heat a pan and stir-fry the pork belly until it releases some fat. Add the carrot and mushroom strips, and stir-fry until lightly golden.

Drizzle the soy sauce around the edge of the pan, then pour in the reserved mushroom soaking water and enough boiling water to fill the pot about 80%. Stir and cover to simmer.

Once the soup comes to a boil, add the cornstarch slurry to thicken. Add the tofu and pour in the beaten eggs while stirring. Before serving, add the apple cider vinegar, ground black pepper, cilantro, and a dash of sesame oil.
