I though it would be nice to make something different with astuage, and this recipe was born.

Make sure to thoroughly cook the onion in order to release its flavour. You can use katakuriko if you don't have kudzu starch. Recipe by Macrobi chef

Ingredients

2 servings
  1. 200 gramsOnion
  2. 2Atsuage
  3. 1 tspSoy sauce
  4. 1Salt
  5. 50 mlWater
  6. 1Kudzu starch dissolved in water
  7. 1Olive oil

Cooking Instructions

  1. 1

    Roughly mince the onion.

  2. 2

    Add oil to a pot and stir-fry the minced onion.

  3. 3

    When the onion is nicely browned, add the salt, soy sauce, and water.

  4. 4

    Now dissolve the kudzu starch in water, add to the pot, and stir until it thickens.

  5. 5

    Oil a frying pan, and fry both sides of the atsuage.

  6. 6

    Serve the atsuage with the thick onion sauce.
