Very easy and delicious fish soup. I love the light and refreshing broth base here. You can add any veggies you like. Best enjoyed with a bowl of steamed white rice 🍚

Ingredients

2 servings
  1. Broth
  2. 3dried shiitake mushrooms
  3. 1 cupwater
  4. 1large umeboshi plum
  5. 4-5 slicesginger
  6. Ingredients
  7. Fish slices and Cod
  8. Tomatoes
  9. Bok choy
  10. Black fungus

Cooking Instructions

    Place dried shiitake mushrooms in a small bowl of water. Leave in fridge to soak overnight.

    Pour “soaked mushroom water” in a large pot. Add in another 3-4 cups of water. Chopped off mushroom stalks and add in the pot. Place also ginger and umeboshi plum.

    Bring to a boil and then lower the heat and let it simmer for 15 mins. Switch off heat and let flavours develop for 20-30mins.

    Add in cherry tomatoes and Bok choy. Then lastly add in fish slices. You can also drizzle some Chinese wine and sesame oil. Enjoy!
