Beef and Burdock Root with Eggs

My mother used to cook this dish for me. I made this with burdock roots from my father's garden.

Cooking Instructions

Cut the burdock root into long thin shavings. Cut the beef into bite-size pieces. Combine the sauce ingredients.

Heat vegetable oil in a pan, add burdock root, and stir-fry until softened.

Add the beef, and continue stir-frying. When the colour of the meat starts to change, pour in the sauce mixture. Cover with a lid, and simmer for about 5 minutes.

Pour in the beaten eggs, and stir quickly with chopsticks. Cover with a lid, and simmer for another minute.

Garnish with thinly sliced green onions, and it's done.
