Sweet and Salty Simmered Beef and Burdock Root

I think every household has their own way to make 'Stir Fried and Simmered Beef and Burdock Root', but this is my method.

If you stir fry the burdock root in the same frying pan you stir fried the beef in, the burdock root will not be properly coated by oil. Even if it's a bother, stir fry it in a separate pan for better, richer flavor. If you do stir fry the beef and burdock root together the flavor will be lighter. Please use whichever method you prefer. The meat stays tender even if you reheat this in the microwave. For 4 servings. Recipe by Asamato

  3. 1 tbspSugar
  4. 1 tbsp● Sake
  5. 1 tbspSoy sauce
  6. 1heaping tablespoon ● Katakuriko
  7. 2 tbspOil
  8. 2 tbspSoy sauce
  9. 5 tbsp★ Sake
  10. 6 tbsp★ Real mirin

Cooking Instructions

  1. 1

Shave the burdock root as if you were sharpening a pencil with a knife. Soak the shavings in a bowl of water with a little vinegar added. When all the burdock root is shaved, drain it well. If you leave it soaking for too long it will lose its fragrance so be careful.

  2. 2

Stir fry the burdock root in 1 tablespoon of sesame oil, and remove from the pan.

  3. 3

Cut the beef into bite-sized pieces, and massage in the sugar and sake. Leave for a bit, then massage in the soy sauce and katakuriko.

  4. 4

Sprinkle the beef with 1 tablespoon of oil, and separate out the pieces. Add the a frying pan and stir-fry, then add the pre-cooked burdock root.

  5. 5

Add the ★ ingredients, simmer and reduce, and it's done. Sprinkle with some shichimi spice to taste.
