Fried Hanpen Fish Cake with Mentaiko and Mayo for Bento
I used the hanpen and mentaiko that had been sitting in my fridge, and it turned out delicious.Adding in the hanpen fish cake after mixing the mayonnaise and mentaiko will help to coat the fish cake more evenly.Hanpen fish cake falls apart easily, so mix gently. These will cook up differently depending on the toaster oven heat setting used, so keep an eye on it when cooking!I used lots of mentaiko, but it tastes delicious with about this much added. I tried to make an easy recipe so that I could cook it on busy mornings.Cutting the potato into small pieces will reduce the cooking time and makes it easy for kids to eat. Please try not to deep-fry it for too long. Simple Tasty and Spicy Konnyaku for Bento
Konnyaku is cheap! I always buy it...It is sweet and spicy, so it goes well together with rice and sake . It gets really spicy if you add in a whole chili pepper, half a pepper might suffice. You can also omit the red pepper and use ichimi or shichimi chili powder instead .The sesame will stick to the konnyaku when cooking if there is water remaining, so it is a good idea to squeeze out the water with a paper towel. Picnic Bento For Hanami or Sports Festivals
This was just enough for 2 adults and 1 toddler. Most of the items in the bento are things a toddler can eat, but they are satisfying for adults, too. When food cools down it doesn't taste as rich or salty as when it's hot, so I try to flavor things a bit more than when I'm serving things right a way!Just make things efficiently and quickly! In Step 5, I used some clotted cream that I had left over when we had it with scones. If you don't have any, you can use cream cheese or similar. For 3 servings. Recipe by Mameko

Squid Daikon for Japanese-Style Bentos
For my recent companion who likes Japanese flavors:* Squid Daikon* Burdock root (gobo), carrots, and green beans wrapped in chicken tenders and fried* Tamagoyaki (pan-fried rolled egg) with mentaiko (spiced roe) and green onion* Simmered arame-type kelp* Rice with black bean and mixed grains* Takuan (pickled daikon radish)Boil the daikon until it's soft.First bring the simmering sauce's flavoring ingredients to a strong boil before adding adding the squid.Don't overcook the squid; it gets hard. The broth will be squid scented.Add the water to the sauce, and then let the daikon absorb all the flavors as it simmers in the squid-scented sauce. The squid is added back in to simmer again at the end, so the squid and the daikon are both tender.
