Boiled Scallops with Ginger (For Cherry Blossom Viewing Bento)

I wanted to stew boiled scallops that absorbed flavors from a sauce, so I came up with this recipe. They have a rich flavour spiced up with ginger, so they're perfect for a packed lunch or snack with drinks.

Don't overcook the scallops, or else they will become tough. Simmer briefly, and let the scallops cool in the sauce to absorb the flavour. Recipe by cherry
