I needed one more item for my bento, so I quickly whipped up one from whatever was in my fridge.

Thanks to the chikuwa, you don't need soup stock. How easy. You can add mentsuyu as seasoning, if you like, but it's easy to just use soy sauce and sugar. Recipe by mimimine

Ingredients

3 servings
  1. 1to 2 Chikuwa
  2. 1/2to 1, depending on the size Eggplant (small Japanese variety)
  3. 1 tspSugar
  4. 1 tspSoy sauce
  5. 1 tbspWater
  6. 1Vegetable oil or sesame oil
  7. 1Sesame seeds
  8. 1Ichimi spice or shichimi spice

Cooking Instructions

    Cut the chikuwa into about 6 pieces. Chop the eggplant into similar sized pieces.

  2. 2

    Add oil to a small pot, lightly sauté, then add sugar, soy sauce, and water, and continue sautéing until the water content is completely reduced.

    Too much water will evaporate over high heat, so heat over medium heat.

  4. 4

    Sprinkle sesame seeds and it's ready to serve.

  5. 5

    Sprinkle ichimi or shichimi spice to taste.
