Easy Kabocha Soup in a Blender

I love kabocha squash and wanted to try making it into soup. This has become one of my staple recipes.
This soup is rich as-is, but if you want to make it even richer add heavy cream or butter. Serve with bread for dipping. Recipe by Nikonikopu-san
Cooking Instructions

Cut the kabocha squash into 3 cm pieces. Finely chop the onion.

Place the kabocha squash and onions on a plate. Cover with plastic wrap and microwave for 5 minutes.

Put all the ingredients in a blender and purée for 1 minute.

Strain the soup to remove the kabocha skin and onion roots.
- 5
Discard the skin and roots. Transfer the soup to a pot and heat for 1-2 minutes. Season with salt and pepper, and it's ready to serve.
