Ingredients

  1. 160 gpalm sugar / gula jawa / gula malaka cut into chunks
  2. 3 piecespandan leaves, tied into a bundle
  3. 700 mlwater
  4. 1packed agar agar (I used swallow brand agar agar)
  5. 200 mlcoconut milk
  6. Pinchsalt

Cooking Instructions

    In a large pot, boil palm sugar and pandan leaves in water until palm sugar dissolves.

    Remove pandan leaves and sieve the palm sugar mixture to remove any sediments. Let it cool.

    Add agar agar powder and bring the mixture back to the boil. Stir to ensure the agar agar power is well dissolved.

    Add salt to coconut milk and stir to combine.

  5. 5

    Pour coconut milk into boiling palm sugar agar agar mixture. Give it a quick stir and bring it back to the boil. Turn off the stove immediately.

  6. 6

    Pour into moulds and allow the agar agar to set. As it sets, it should separate into two distinct layers.
    Once set, chill the pudding until required.
