Ingredients

  1. 1 kgIdli batter or as needed
  2. 1 cupCooked toor daal
  3. 1 cupFresh grated coconut
  4. 5Dry red chillies
  5. 1 tablespoonCoriander seeds
  6. 1 tablespoonSambar masala (any premium brand)
  7. 2 tspJaggery powder
  8. 2 tablespoonsTamarind pulp
  9. 1 tablespoonCoconut oil
  10. 1.5 tspMustard seeds
  11. 10Curry leaves
  12. 2 pinchesHing
  13. 2Dry red chillies
  14. 1Chopped onion
  15. 1Chopped tomato
  16. 1 tspGinger garlic paste
  17. 1.5 cups (1.5 cups)Steamed carrots, beans, radish cut in cubes
  18. As required Drumstick beans cooked 2 pieces cut in 1 inch pieces
  19. 1/2 cupAny other choice of vegetable cooked
  20. 1 tspGhee
  21. as neededWater
  22. As neededCoriander leaves to garnish

Cooking Instructions

    First, steam idlis as per the attached recipe and keep ready and hot in an insulated box.

    Now to make the sambhar follow these steps Heat 1/2 spoonfull of oil and light roast coriander seeds, red chillies, and grated coconut and make a paste after cooling.

    Heat rest of the oil and add mustard seeds, hing, and saute well. Add the onions, ginger garlic paste and saute well. Then add tomatoes and cook till soft.

    Now, add the sambar powder, prepared masala and saute well. Keep cooking till aromatic. Now add the vegetables and water, tamarind water, and jaggery an let it simmer for 10 minutes.

    Lastly, give a tempering of ghee, mustard seeds, hing, curry leaves and dry red chillies. Mix, cover and keep.

    Serve delicious spicy Sambhar with soft and spongy idlis and enjoy!
