My son is not fond of vegetables, but I saw him once dipping spinach in the mayonnaise that was on a salad that was also served, and thought that he might eat spinach with mayonnaise. I made this and it was a big success.

Try adding crabsticks or chikuwa fish paste sticks instead of the hanpen fish cakes. Recipe by JUNSEI mama

Ingredients

4 servings
  1. 2bunches Spinach
  2. 2○ Eggs
  3. 1○ Salt
  4. 1Hanpen
  5. 3 tbspMayonnaise
  6. 2 tbsp● Ground sesame seeds
  7. 1/2 tbspSoy sauce
  8. 1Toasted whole sesame seeds (as garnish)

Cooking Instructions

    Blanch the spinach, drain, refresh in cold water, and wring out tightly. Cut into 3 cm pieces.

    Cut the hanpen into 1 cm dice shapes.

  3. 3

    Heat some oil in a frying pan, and make finely scrambled eggs with the ○ ingredients.

    Combine the spinach, hanpen, and scrambled egg in a bowl.

  5. 5

    Season with the ● ingredients. Transfer to serving plates, sprinkle with some sesame seeds, and serve.
