Simple Peanut Butter Protein Bars

Four ingredients, Gluten-free and Vegan! These are some of the easiest bars I have ever made. A great low waste snack for on the go. Ps the random nut bar in the corner is another recipe lol.

Ingredients

Makes approx 15 bars
  1. 1 cupraw blanched peanuts (this means they have no skin)
  2. 1 cupdried dates
  3. 1serving chocolate protein powder (I use a pea protein blend, one serving of this is about 2 scoops or 30 grams.)
  4. Coconut thread for topping (optional)

Cooking Instructions

    Pre heat oven to 180 degrees celsius on fan grill. Boil a jug of water.

    In a bowl add dried dates and cover until fully submerged with just boiling water. leave this to sit while you prepare the rest of the ingredients.

    On a baking sheet place peanuts, grill in the oven for about 3-5 mins until golden and toasty. They should be done when you can smell them and see all the natural oils.

    In a large food processor place peanuts and process to a peanut butter consistency. This takes time but is a satisfying process. Every 30 seconds make sure you turn off your food processor and scrape down the sides to ensure even processing but also this stops the blender from overheating. TRUST the process the butter will form it just takes awhile.

    After the peanut butter has been made add in the drained soaked dates and protein powder. Blend (Save the date water for the next step)

    The mixture will be thick and sticky add 1 tbsp at a time the date water until a dough like ball forms. Place into a container, sprinkle with coconut and refrigerate for at least 3 hours before serving.
