Use It Up Parsnip Soup

Today I really had to use up the sad bag of parsnips in my fridge … some of them were sprouting and threatening to evolve into a new life form. So I made this soup which I wasn’t feeling particularly enthusiastic about if I’m honest - BUT it is such a lovely surprise! Simple and really really delicious 😋 #lunch
Cooking Instructions

Fry the onions in a splash of oil for about 5 minutes or so.

Add the dried herbs and onion granules and stir well. Then stir in the veg.

Fry the veg over a reasonably high heat to get a little browning colour on them and add extra flavour.

Then pour in the stock, stir well and leave to simmer with the lid on for 30 minutes.

When the veg is soft and tender, blend until smooth. Taste here and add salt and pepper to taste.

Am not particularly in love with Egwusi soup ( I have my special Preference) but Egwusi with Dried Water leaf soup holds a special spot in my heart because my Dad taught me how to make it.The aroma, taste and texture is simply beyond description and this Harmattan season dried water leaves is easy to find or you can buy the water leaves and dry them easily at home for some hours..This soup is just super easy, super delish and so good.

I’d always say healthy eating is healthy living and note please if you’re hypertensive and looking to reduce weight, this should be taken in the most minimal quantity and the reason is this, palm oil used to make egusi soup is a saturated fat and when it is bleached it changes to a trans fat which is not healthy for the heart this is for hypertensive persons , but I’m not managing any hypertensive case so I did just a little of bleaching and also the melon seeds contains fats so as a person looking to reduce weight or even a hypertensive person you don’t need too much of fat, so ensure the vegetables in your egusi is much more.
