One of the goals for 2022 is the inclusion of veggies, herbs and spices in my meals and less oil. Keeping this in mind, dambun couscous is a meal that allow you to achieve that. Also, it's been long I made it, so, my family enjoyed it.

Ingredients

50 minutes
4 people
  1. 2 cupscouscous
  2. 1/2 cupwarm water
  3. 1big red bell pepper
  4. 3Scotch bonnet pepper
  5. Moringa leaves as desired
  6. 1/3 cuppeanut oil
  7. 1/2 cupraw peanuts
  8. Herbs and spices
  9. Seasalt to taste
  10. Ginger and garlic paste
  11. Onions
  12. Scallions
  13. Steamed carrots
  14. Sweet corn

Cooking Instructions

    Prepare vegetables by cleaning and cutting/chopping into desired shapes and sizes.

    Pour couscous into a clean big bowl and add all ingredients and warm water except carrots and sweet corns. Mix together to incorporate well.

    Get a foil paper (I doubled mine to avoid tear). Pour the mixture into the foil. Fold well to seal and trap in steam.

    Prepare your steamer

    Place the foil with the couscous on the steamer plate or into the steaming pot and cover for 35-40 minutes.

    Open and pour in the already steamed carrots and sweet corns. Leave for another 3minutes and it's done.

    Mix everything together and it's ready to be served with anything of choice; hard boiled eggs, grilled chicken, beef, fish etc

Very healthy goals, i recently planted many herbs in my garden in hopes that i use them often. And the food looks inviting 👏🏼
