Wow I am sure that this is the new and only way I will be cooking my roasted potatoes from now on! The recipe is adjusted from the classic hasselback potatoes by Jamie Oliver.

Wow I am sure that this is the new and only way I will be cooking my roasted potatoes from now on! The recipe is adjusted from the classic hasselback potatoes by Jamie Oliver.

Cooking Instructions

Wash your potatoes well. I keep the skin on. In a bowl add cold water from the tap. Turn oven on 180 celsius degrees on fan.

Now it is time to slice the potatoes “hasselback” style. It is easier if you use a big wooden spoon for that. Place the potato on the spoon and cut thinly without cutting the potatoes all the way. So the spoon is used to help you to not slice the potato all the way.

Place all cut potatoes in the bowl with water. And then place them in the oven dish with cut side facing up.

To prepare the olive oil: in a mortar and pestle add oregano, rosemary and thyme, olive oil, salt and pepper and mash it well. This will infuse your normal olive oil.

Pour olive oil on top of potatoes and top up with your truffle oil. Mix well and cook for 45 min.

In a blender add a handful of almond and blend. After 45 min have passed add the almonds and cheese on top and bake for an extra 15 min.
