Be sure to add the sugar, soy sauce and salt after letting the oil cool down a bit, otherwise it will splatter. Recipe by Sorairo cookpad.japan -

Spicy! Mapo Noodles~ Mapo Tofu Ramen~ Spicy! Mapo Noodles~ Mapo Tofu Ramen~
I loved the mapo tofu from the restaurant near my old company that I used to eat at, but I wasn't able to go there after quitting that company, so I tried making it myself. This is already plenty spicy with doubanjiang, red chili oil, and garlic, so add ichimi chili powder and Sichuan pepper to your preferred spiciness. Use less if you dislike spicy things, and add tons if you love extreme spiciness! Feel free to use bok choy, spinach, or any of your favorite vegetables to replace the komatsuna. For 1 serving. Chinese Chive and Egg Gyoza (A Chinese Home Recipe) Chinese Chive and Egg Gyoza (A Chinese Home Recipe)
This is a recipe that I learned from my parents-in-law who came all the way from China to help me with my birth. I like crispy skins, but the authentic way of cooking these is to cook until slightly golden brown, and add lots of water to steam, and cook into a soft skin.Make sure to use hot water when kneading the flour. You can use cold water when making boiled gyoza, but the point to make pan-fried gyoza seems to be to use hot water. The skins will fall apart when boiling if you don't knead with cold water when making boiled gyoza. It's also a point to mix the salt into the eggs while still raw when making the scrambled eggs. The eggs release extra moisture and become watery if you make the scrambled eggs and then add salt. Using just enough oil to make the filling shiny should be sufficient when adding oil. Chinese Cucumber and Egg Stir-Fry Chinese Cucumber and Egg Stir-Fry
This is a standard Chinese home cooking recipe that I make all the time.My 2 year old son eats the cucumber only, and my 1 year old son eats the egg only. Just like nikujaga (Japanese meat and potatoes) in Japan, every family in China has a slightly different recipe for this. This one has a north-east China flavor. If you don't have any Sichuan pepper, you can substitute black pepper. But Sichuan pepper eggs are so delicious!Slice the cucumber thickly. Put a timer set to 1 minute as soon as you put the cucumber in the pan. The cucumbers taste better if they retain their crispy texture, so don't cook them for longer than a minute. For 1 plateful.
