Succulent Beef Satay with bamboo shoots. 🍜

This silky beef satay is so morish and lush served over rice or with noodles as I've done here. These are actually plant based beetroot noods - aren't they a fabulous colour? I adore beetroot so had to give these a try when I saw them.

Place the beef into the water/cornflour mixture and leave for at least 30 mins in the fridge to tenderise.

Begin preparing your noodles or rice now.
Mix together all of the satay sauce ingredients and set aside. Heat up a wok over a high heat. Add the oil.
Once hot drain the water from the beef then add it to the wok. Stir fry for around 4-5 minutes then add the bamboo shoots plus the msg (if using it). Stir fry for a minute then pour in the satay sauce. Reduce down by simmering over a high heat and stirring occasionally until thickened so it coats the back of a spoon. - 3
Turn off the heat. Add in the whites of the onion and half the red chilli. Stir through the sauce.
Serve up with your chosen noodles/rice, garnish with the greens of the spring onion plus the remaining fresh chilli. Enjoy!
