  1. 2ripe plantain
  2. 1/2 tsp.Salt
  3. Water
  4. 3eggs
  5. Tomato 🍅
  6. Scotch bonnet
  7. Onion 🌰
  8. Curry
  9. Tyme
  10. Seasoning
  11. Vegetable oil
  12. Pumpkin leaves 🍃(ugu leaves)

Cooking Instructions

    Wash the plantains with clean water and cut into 2 or 3 depending on the size you want

    Place the cut plantains into a medium sized pot. Add some water just enough to cover the plantains in the pot and cook on medium heat for 10mins.

    Add the salt and cook further for 5mins before turning off the burner.

    Heat veg oil til hot add chopped onions Stir-fry for 1 minute.

    Then add chopped pepper crushed seasoning,salt to taste, curry &tyme
    Leave to fry for 5 minutes.

    Leave for 3 minutes and while stirring occasionally. Add chopped pumpkin leaves and stir.

    Leave to simmer for 3 minutes.

    Ready to serve

    Chop scotch bonnet, onion, tomatoes, ugu pumpkin leaves set aside.

    Break the eggs into the pot and stir to incorporate the mixture.
