Eggplant fritters

Ingredients

  1. 2large eggplants
  2. 2medium potatoes
  3. 1/2green pepper
  4. Fresh herbs
  5. 1/4 cupsweet corn
  6. Cupbreadcrumbs
  7. 3eggs
  8. Spice

Cooking Instructions

  1. 1

    Finely blend the eggplant or use a grater put it in a strainer the blend onion,green pepper, potatoes and sweet corn. Press down the vegetables to remove excess water.

    Finely Chop the herbs I used mint & basil with a few spinach leaves, you can also add garlic and ginger if you like.

    Put all the ingredients in one dish add breadcrumbs, eggs, spices, salt & pepper the mix

  4. 4

    Heat oil and fry until golden brown on both sides
