Hot and Sour Soup

The spiciness of hot and sour soup comes from the pepper, so it needs to be added in a certain amount. I like it spicier, so I add more chili peppers after serving. 🌶️

  20. 1 tablespoonspicy bean paste
  21. 2 tablespoonsblack vinegar
  22. 2-3 tablespoonswhite vinegar
  23. 1/2 tablespoonsesame oil

Cooking Instructions

  1. 1

Marinate the pork strips with the marinade for 10 minutes.

  2. 2

Cut the bamboo shoots, king oyster mushrooms, carrot, wood ear mushrooms, and tofu into thin strips.

  3. 3

Heat a little oil in a pan and stir-fry the pork strips until they change color, then remove immediately (do not overcook).

  4. 4

In the remaining oil, sauté the white parts of the green onions, then add the carrot strips and stir-fry until softened. Add water or broth and bring to a boil over high heat.

  5. 5

Add soy sauce, sugar, and spicy bean paste.

  6. 6

Add the bamboo shoots, wood ear mushrooms, tofu, king oyster mushrooms, and stir-fried pork strips. Bring to a boil and cook for another 5 minutes.

  7. 7

Sprinkle with white pepper and mix well, then thicken with cornstarch water.

  8. 8

Reduce to low heat and slowly drizzle in the beaten egg. Before serving, add black vinegar, white vinegar, and sesame oil (do not add vinegar too early; the amount depends on personal preference for acidity).

  9. 9

Sprinkle with chopped green onions to finish (since my kids don't eat spicy food, I usually add chili peppers after serving).
