Hey guess what?! I had some leftover chicken breasts and we needed a quick supper. We ate this hot in tortillas as wraps but will be fantastic tomorrow as a tasty chicken salad for lunch. It would be a really good quesadilla filling too.

Ingredients

  1. 3roasted chicken breast, chopped
  2. 11 /2 cups water
  3. 2chicken bullion cubes
  4. 4 ozcream cheese, cubed
  5. 1hefty tbsp ranch powder
  6. 1/2 lbfried bacon, chopped

Cooking Instructions

20 minutes
  1. 1

    Add the first 3 ingredients in a skillet on medium heat. Steam and soften the chicken for a couple of minutes.

  2. 2

    Add the ranch powder and cream cheese and allow to melt. Cook it down until the bubbles are thick. Cut the heat. We spooned ours into warm tortillas and added shredded cheese and sour cream. Tomorrow we’ll have it on Hawaiian rolls.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
