Ingredients

  1. 200 gmsfresh paneer cubed
  2. 1/2 cupgreen peas
  3. 5-6cashewnuts
  4. 1 tspsesame seeds
  5. 3tomatoes chopped
  6. 2onions chopped
  7. 1.5 tspginger paste
  8. 1 tspgarlic paste
  9. 2-3green chillies
  10. 1/2 tspturmeric powder
  11. 1 tspKashmiri Red Chilli Powder
  12. 1/2 tspcoriander powder
  13. 1/2 tspfennel seed powder
  14. 1/4 tspasafoetida
  15. 1/2 tspgaram masala powder
  16. 3green cardamoms
  17. 1" stick cardamom
  18. 4cloves
  19. 1/2 tspcumin seeds
  20. 2 tbspfresh cream
  21. as requiredTo taste salt
  22. 1/2 tspsugar
  23. 1 tspkasoori methi (dried fenugreek leaves)
  24. 1.5 tspcoriander chopped
  25. 1 tbspginger julienne
  26. As neededoil for cooking
  27. 1 tspghee / clarified butter

Cooking Instructions

    Heat oil in a pan or wok. Saute onion, cashewnuts and green chillies.Cook until onion starts browning.Add tomatoes and 1/4 th teaspoon salt.Cook until tomatoes are soft.Set aside to cool.Blend the sautéed vegetables alongwith ginger garlic paste,sesame seeds,cashewnuts to a smooth paste and set aside.

    In a separate pan shallow fry paneer cubes.Flip and lightly fry the other side. Add 1 tablespoon more oil and ghee to the pan in which paneer is fried.Add cumin seeds and half crushed whole garam masala.Saute till it sizzles.Add ginger julienne,Kashmiri Red Chilli Powder and turmeric powder and saute.Now add the ground onion tomato paste,coriander powder,salt and sugar to taste.Stir well till oil leaves sides. Add green peas.

    Toss few minutes and add water.Cook on medium to high heat until the peas are soft and oil floats on top of the gravy.Add fried paneer to the gravy and lightly mix.Add fennel seed powder, crushed kasoori methi and garam masala and simmer for 2-3 minutes.Adjust spices to your taste.

    Garnish with chopped coriander,ginger juliennes and rest of fresh cream.Serve hot with any Indian flatbread or jeera rice or pulao and savour the flavours of restaurant style Malai Matar Paneer on a special weekend dinner.
