Cooking Instructions
- 1
Preheat oven to 375F. Coat 9 or 10 inch pie dish with oil spray
- 2
Make the crust - combine pecans, butter, sugar and salt and mix thoroughly with fork
- 3
Transfer mix to pie dish pressing evenly on the bottom and up the sidewall.
- 4
Bake until fragrant and toasty brown, about 10 - 15 mins. Remove from oven and let cool. Turn down oven to 300F
- 5
Combine brown sugar, corn starch, flour and salt in the top of a double boiler on med-high heat and stir to combine
- 6
Add egg yolks and continue to stir until incorporated. Gradually add the milk, stirring constantly until the mixture thickens and can coat the back of the spoon and is smooth
- 7
Stir in vanilla and pour mixture in pie shell. Bake for 15 mins until mix is warmed through and firm.
- 8
Let cool. Serve with whipped cream 😊
