Broccoli Almond Soup

An easy to make, delicious and healthy soup

Ingredients

25 minutes
3 to 4 persons
  1. 1small broccoli (about 15 - 20) florets
  2. 1/2 cupchopped onion
  3. 1 cupmilk
  4. 1 cupwater
  5. 1 tbspflour
  6. 1 tbspbutter + olive oil
  7. 1/4 tsppepper
  8. 1/2 tspsalt
  9. 1bayleaf
  10. 12almonds, blanched and peeled

    Boil water and blanch broccoli for one minute. Remove broccoli from hot water and transfer them into iced water to stop cooking.

    Prepare Purée of broccoli with little water using a grinder.

    Blanch almonds and peel them.

  4. 4

    Heat butter and oil in a pan on low flame, add finely chopped onion and sauté them till soft. Add bay leaf. Add flour and fry for a minute on low flame. Add milk little by little and add half a cup of water and bring it to a good boil.

    Now mix broccoli purée, half cup of water, salt and pepper. Stir and bring it to a boil.

    Toast the almonds with a little oil till almonds become crisp.

  7. 7

    Add almonds in a soup.Don’t boil soup for long time it’s colour will change.

  8. 8

    Serve hot healthy soup garnishing with toasted almonds and enjoy.
