Cooking Instructions

Take fresh red carrots, wash them, and then peel them with a knife or clean them lightly with a knife.

Grate the carrots using a grater, then heat ghee in a pan and add the grated carrots. Sauté for a while until the water evaporates.

Add full-fat milk and continue to sauté until the milk dries up and the carrots are cooked. Stir occasionally to prevent sticking to the pan.

Add sugar. Always add sugar after the milk has dried up to keep the halwa soft. Once the sugar dissolves, dry it again as the syrup will make the halwa wet. Finally, add more ghee.

Sauté once more. If you like, add chopped nuts at this stage and sauté. Add cardamom powder and mix well. Your halwa is ready for the New Year celebration. Add khoya on top, turn off the heat, and serve with nuts on top.
