Boil the eggs in salt water for 8-10 min. Cool, peel and stir fry with turmeric, salt and red chili powder, Keep it aside

Heat mustard oil and add all the whole spices one after another. When the oil turns aromatic, add chopped onions.

When the onion turns light brown add green chilies, garlic, and ginger. Sauté well until the raw smell of all the ingredients goes away.

Make the masala paste by adding water to the ingredients. Add it to the pan. Fry the masala well.

Add the chopped tomatoes. Fry until tomatoes turn mushy.

Add water, cover, and let it cook evenly.

To the cooked masala, add stir-fried boiled eggs. Coat them well.

Adjust the consistency as you desire.Add garam masala and mix.Finally garnish the egg masala curry with ginger julienne, Kasuri methi, slot green chilies/Thai red chili, and chopped coriander leaves.
