  1. 1 tbspolive oil
  2. 1yellow onion, diced
  3. 2 clovesgarlic, minced
  4. 16 ozground turkey
  5. 4 cupschicken broth
  6. 15 ozkidney beans, drained and rinsed
  7. 15 ozcannelini beans, drained and rinsed
  8. 15 ozdiced tomatoes
  9. 2 tspchilli powder
  10. 1.5 tspcumin
  11. Salt and pepper, to taste
  12. 10 ozelbow macaroni
  13. 1/2 cupshredded Mexican blend cheese
  14. Fresh or dried parsley flakes

Cooking Instructions

    Heat olive oil in Dutch oven. Saute onion for a minute or so, then add turkey.

    When turkey is almost done, add garlic, spices, salt, and pepper.

    When turkey is no longer pink, add broth, tomatoes, and beans. Bring to a simmer.

    Stir in pasta and cook according to package directions.

    When pasta is tender, sprinkle cheese and parsley on top. Cover pot for 2 minutes to allow cheese to melt.
