    In a pot, put some oil, onion and saute it until brown. Divide it into and put the other aside

    In the same pot add your mutton, Mandi spice, garlic and ginger powder, seasoning and a good amount of water and allow to cook until 80% done.

    Seperate the cooked mutton from the stock and pour in your rice in to the stock, add green chilly and Scotch bonnet both in their whole size. Adjust the seasoning and water.

    When the rice is almost done, add your raisins and that your brown onion from earlier and let it finish on a low flame

    Smoke the rice using a burning coal and a little oil.

  6. 6

    Put the mutton into a foil paper, add in small oil, mandi spice and seasoning and roast it in an oven for 20 mins

  7. 7

    Serve it with any salad if your choice and enjoy.
